Before sharing the recipe, here's a quick overview of our trip:
Thursday - arrive at Lake Tahoe, rest and fuel up
Friday - I rented a bike and rode around Lake Tahoe while the racers did their pre-race prep and resting.
Saturday- Sunday - Tahoe Rim Trail 100 followed by sleeping and eating for all
Monday - Tuesday - Yosemite, upper pines area.
Wednesday - Thursday - Yosemite, lone pine area + Mt. Whitney
Friday - Saturday - driving through Death Valley, exploring Red Rocks area and making our way to Las Vegas to fly home.
Our immediate travel group consists of myself, the hubby, and friends Josh and Matt. The guys basically did all of the trip planning so I took the lead on planning food (naturally!) Anwyay, here's a few pics from the weekend, then the recipe for the yummy trail mix I made!!
The one thing I wanted to do during this trip is ride around Lake Tahoe. I rented a bike from a local shop at Incline Village, NV and had a top notch experience. Not to mention how incredible the ride was!!!! I originally planned to only ride about 45 miles but ended up doing the whole thing with a long, relaxing lunch break by the lake.
For the trail mix I made these molasses glazed sesame walnuts, but you could always sub regular walnuts and sesame seeds.
3 c walnuts
2-3 tbsp molasses
1/4 c sesame seeds
1/4 tsp ginger powder
Sprinkle of nutmeg, adjust to taste
Sprinkle of sea salt, adjust to taste
Sprinkle of sugar, optional
Stress Buster Trail Mix
2 cups molasses glazed sesame walnuts
1/2 c goji berries
1/2 c pumpkin seeds
1/2 c dark chocolate chips
Combine all ingredients in a medium Tupperware bowl and mix throughly. I like to divide mine into snack-sized plastic baggies to grab and go as needed, each with about 1/3 c. trail mix.
About the ingredients:
Walnuts- rich in anti-inflammatory, brain boosting omega 3's
Sesame seeds - support heart health and help boost serotonin levels. The lignans within sesame seed support antioxidant activity and boost absorption of vitamins A, D, E. They're also a quality source of iron, magnesium and copper.
Pumpkin seeds - help boost serotonin levels, source of magnesium which works to relax muscles, combat stress
Goji berries - high in antioxidants, vitamin C and Vitamin A to support immune health and help your body combat stress. They also serve as a source of fiber, protein and amino acids. They have been researched for their mood-boosting benefits and traditionally used in Chinese medicine to combat anxiety and depression.
Dark chocolate - source of antioxidants and general happy vibes :)
