Life lately can be described in one word: chaos.

Ok, three words: chaotic but fun.

I'm keeping busy but thoroughly enjoying myself and just trying to make sure I sleep at night and have fuel in the gas tank! Let me put that in perspective: last week I'm fairly certain I worked major overtime + logged my biggest training week of the year, and last night I finally made it to the grocery store in what has felt like two weeks. The husband was returning from his ultra-marathon in Georgia and I knew I had better stock up on plenty of food to be consumed (because we all know how endurance athletes can eat after a big race). 

Thankfully, things are slowing down for me, but regardless, this month's recipe redux theme is oh so perfect: 7-ingredient or less recipes. Simple, quick, delicious. That's pretty much the name of the game these days in putting healthy food on the table and keeping my belly (and the husband's) happy.

Savor the Flavor of Eating Right

The theme for the 2016 National Nutrition Month® is "Savor the Flavor of Eating Right," which encourages everyone to take time to enjoy food traditions and appreciate the pleasures, great flavors and social experiences food can add to our lives. To kick off NNM® here on the blog, I wanted to take the time to share what "Savor the Flavor of Eating Right," means to me in regards to the importance of balancing quality nutrition with attaining a and maintaining a healthy relationship with food. But first, a quick backstory:

Flash back about 8-9 years ago to my early years of college (has it REALLY been that long?!?), when I was a ripe young 20 year old trying to figure out what I wanted to do with my life. Sure, I was a majoring in Human Nutrition, Foods & Exercise at Virginia Tech and a member of the triathlon team, but in many ways, I felt like an imposter. Many people don't know, but I actually was accepted to Virginia Tech as an early admission into the engineering program.
