The Recipe Redux: September Theme
"We love throwing ingredients together on a sheet pan and roasting for a simple sheet pan dinner. They make busy weeknights a bit more manageable. (And clean-up isn’t bad either!) Show us your healthy take on a sheet pan meal."
To make this recipe even more simple, I bought a bag of pre-chopped broccoli florets (fresh, not frozen) and had my husband wash the potatoes for me. I managed to carefully chop the potatoes with one hand. Then it was just about mixing and assembling on the pan. 22 minutes later, dinner was ready to be served!
4 c. washed, diced potatoes
4 c. broccoli florets
2 tbsp extra-virgin olive oil
3 cloves garlic, peeled, minced
1 tbsp ginger, peeled, minced
1 tbsp lite soy sauce or Bragg's Liquid Aminos
Sriracha, to taste
Salt and pepper, to taste
3-4 tbsp Soyaki sauce
3- 4 oz choice fish filets (cod, tilapia or salmon work well here)
